Beef rice and mushroom with ginger in a Donabe

The flavors and aromas of food cooked in a Donabe is incredible. It’s hard to describe until you try it yourself. Donabe also known as a clay pot in Japan is used to make amazing one-pot meals. This rice dish with ginger-infused beef is comforting and simple to make. One of my favorite one-pot meals to make especially in the winter.

Ginger rice with beef and mushroom cooked in a Donabe: A comforting and aromatic dish fragrant with ginger. Flavors that warm the soul 🙂

  • Donabe (clay pot)
  • 2 cup rice
  • 1 ½ cup water
  • 1 tbsp thinly sliced ginger
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 4 sliced shiitake mushroom
  • 1 minced garlic clove
  • 3/4 lb thinly slice sirloin beef
  • 1 scallion (optional, add towards the end )
  • salt and pepper to taste
  1. Rinse rice thoroughly and soak for 20 mins.

  2. Marinate beef with some soy sauce , add oil and saute beef in a pan until its almost cooked.

  3. Add rice, beef, soy sauce and shiitake mushroom to the Donabe. top it off with sliced ginger. Cover Donabe with both lids and start cooking for around 15 mins or until you see steam coming out for 2 mins. (tip: you can make hard boiled eggs if you put the egg on top of the first lid; don't block any holes).

  4. Turn heat off around 15 mins or once you see the steam for around 2 mins. Let it sit for 20mins (it will continue to cook a bit)

  5. Once it's been 20 mins you can remove the lid and mix in scallion if you like. Salt and pepper to taste.
