Chanko Nabe (Sumo Stew) is a famous stew in Japan made for sumo wrestlers. This is a well-balanced meal that fuels the strength of sumo wrestlers. This hotpot mainly consists of meat, seafood, and vegetables (you can adjust the ingredients based on preference). Just like hotpot, anything can be added.

A hearty soup/stew made for Sumo wrestlers in Japan. This hotpot is filled with veggies and protein in a savory broth. Chanko nabe is a healthy and delicious meal that's simple to make.

I usually pair this with udon noodles!

Broth

  • 4 cups chicken stock
  • 3 slices ginger
  • 2 cloves crushed garlic
  • 1 tsp white miso (optional )

Meat

  • 1 lb cod fillet
  • 5-7 pieces shrimp
  • 8 oz sliced beef (can replace with meat balls )
  • 1 pack fish cake (can be found at any Asian supermarkets)

Vegetable

  • napa cabbage
  • carrots
  • shiitake mushroom
  • enoki mushroom
  • scallion (optional; add towards end )
  1. In a pot, start off with the soup base. chicken stock, sliced ginger, crushed garlic, and miso paste. Bring it to a simmer on medium heat.

  2. Add in the vegetables and bring it to a simmer.

  3. Next, add in the proteins and let it simmer for 10 minutes.

  4. Serve just as is or keep it on a low simmer with a portable stovetop (add in water and extra ingredients per your liking)
